Apple muffinsIngredients (makes 12)Wet Mix
Dry Mix
MethodPreheat oven and place muffin cases in a12 hole muffin pan. Thoroughly combine the wet mix ingredients in a bowl. Sift the dry ingredients and combine in a separate bowl. Mix the dry ingredients into the wet mix Drop spoons of batter into the cases until all batter is used. Bake at 200c for 20-25 minutes.
Chocolate self-saucing puddingIngredients (Serves 4)
Sauce
MethodPreheat oven to 180c. Grease four 1-cup oven-proof dishes Combine butter, milk and eggs in a jug. Slowly add to the flour mixture, whisking until well combined and smooth. Spoon into the 4 dishes and smooth tops. Make sauce: Sprinkle combined sugar and cocoa over the puddings. Slowly pour boiling water over the back of the spoon to cover the puddings. Place dishes onto a baking tray. Bake for 20-25 minutes, or until the puddings spring back when pressed gently in centre.
